From June to October, Suran begins to expand. We consume the leaves as leafy vegetables up until this point, then in October, when the leaves begin to turn entirely dry, it’s time to cultivate the roots from the soil as needed.
My father used to dig a little hole in the earth and insert a Suran shoot into it when I was a child. It spends 6-7 months in dormancy. When the monsoon arrives, the tuber sprouts and grows quickly.
Suran has some juice inside of it, which itches our skin and throat when we peel off the skin. You can apply Coconut Oil while cutting the Suran. Applying Kokam Aagal as a marinade can help to neutralize the itchiness. If the irritation persists in your throat, you can either wait for a while or consume a small amount of tamarind, Kokam, or lemon juice.
Malvani Solkadhi – Bhaat (Steamed Rice) and Malvani Daal – Bhat go well with Suran Kaap, but my favorite combination is Malvani Tomato Saar and Bhaat since they perfectly substitute Malvani Fish Curry and Fried Fish. It goes well with any type of sour coconut chutney dip.

Instructions

Take a whole Suran.

Cut it in half.

Cut it into equal pieces once more.

Peal off Suran's outer layer.
While cutting the Suran, apply Coconut oil to your hand to prevent your skin from itching. -

Slice it into medium-thick pieces.

Give them a quick rinse under cold water and remove the starch from slices.

Drain all of the water from the Slices.

Add Kokam Aagal.

Add Malvani Fish Curry Masala to your spice requirement.

Add Salt to your taste.

Make sure to mix it well.

Take Rice Flour in one plate.

Turn on the flame to a medium heat.

Cover all the marinated slices with Rice Flour.

Greece the Hot pan with some oil.

Line a heated pan with all of the coated slices to shallow fry.

Fry it on both sides until the color turns golden brown.
