Malvani Surmai fry is a favorite dish among fish eaters. Kingfish is popularly known as Surmai, locally in Kokan Seashore. Surmai is quite big, so it is evenly cut into thin slices. It has a long center bone, so you don’t require much effort while eating, it is one of the reasons why it is popular among fish lovers or if someone is new to sea seafood it is the best to start with. Surmai has a layered structure. When it is properly cooked those layers get separated and it is really fun to eat those layers. 

I remember, every time we had get together with our family and friends, my father always used to bring Surmai. Then my Grandmother and Mother used to make a real Crispy Surmai Fry with Little spicy Surmai Curry. 

This Malvani Surmai Fry / Malvani King Fish Fry recipe is simple with minimum Marinating Ingredients. You can feel the different textures, Moist from the inside and Crispy from the outside. That marination goes into each layer and gives you a spice kick.

Malvani Surmai Fry is a great appetizer that pairs nicely with Rice Bhakri or any kind of Malvani Fish curry and Steamed Rice.

Description

Surmai has a layered structure. When it properly cooked then those layers got separated and it is really fun to eat those layers. 

Ingredients
    Main Ingrediants
  • 500 g Surmai (King Fish) (Cut into Thin slices)
  • 8-10 tbsp Oil (To Shallow Fry)
  • Marinate Ingredients
  • 3-4 tbsp Malvani Fish Curry Masala (To Your Taste)
  • 2 tbsp Sea Salt (To Your Taste)
  • 2 tbsp Kokum / Garcinia Indica Agal (Agal (Unsweetened Extract of Ratamba Fruit))
  • Coating Ingradiant
  • 1 cup Rice Flour
INSTRUCTIONS
  1. Slice the Surmai / King fish, thinly, and give it a thorough cleaning.

  2. Allow all of the water to drip off of the slices.

  3. Marinate the slices using Kokum Agal, Malvani Fish Curry Masala, and sea salt.

    Kokam Agal is Unsweetened Extract of Ratamba Fruit.
  4. Put on the marinade and leave it for 30 minutes.

  5. Place the Pan over Low Heat

  6. Add some oil into the Tawa once it's heated up.

  7. Coat the Marinated slices with Rice Flour

  8. Put the Coated Slices on the Hot Pan

  9. Flip the Slice, to Cook on opposite side till it becomes Golden Brown.

  10. Give it one more flip on both the sides and Your Malvani Surmai Fry is Ready to be Served.
